The first Japanese gin made in Kyoto, KI NO BI is an elegant and distinctively Japanese take on the ever-popular dry gin style. This crafted spirit is created using a rice spirit base and peerless water sourced from the Fushimi sake–brewing district. Juniper frames and deepens the array of Japanese botanicals such as yellow yuzu, hinoki wood chips, bamboo, gyokuro tea from the Uji region and green sanshō berries. The result is a very complex, pure and crystalline example of gin that clearly speaks of its place of birth. KI NO BI "SEI" Navy Strength started life as a limited bottling for the Tokyo International BarShow 2017, but has now become a permanent fixture in the range. Made with the same intricate production method as the original KI NO BI; using 11 botanicals distilled in six distinct flavour categories. The final blend has been recalibrated by our distilling team to bring out the best of each botanical at the higher proof. Although often confused with 100 Proof or 57.1% ABV, this bottling is at the traditional British Navy Strength of 54.5% ABV. In contrast to the original KI NO BI, which has delicate and gentle profile, KI NO BI "SEI" Navy Strength has a thicker mouthfeel and full-bodied flavour, which pairs well in cocktails.
