Designed for the New York market, outside America this incredible sake is only available in a handful of places in London and special events in Japan. In fact, it was available in London before being seen in Tokyo. This makes it very hard to come by and demand is therefore exceedingly high. Urakasumi M takes its name from the prefecture of its birth, Miyagi. The floral and scroll-like design is inspired by Lespedeza Thunbergii – the official flower of the Miyagi that blooms in pinkish purple throughout the region in late summer. It’s made from the finest Yamada Nishiki – the king of sake rice – polished down so that only 40% of the grain remains, resulting in a sake of crystal clarity and breath-taking fragrance. M is matured for a year before release, building its complexity. Expect a veritable fruit salad of pear, apple, lime, pineapple, mango and peach, interlaced with intriguing notes of banana bread, marshmallow and caramel. This is very much the sake to pull out when you want to get the attention of the entire room and then stun it into silence. The Saura Brewery, located in Miyagi prefecture, was founded in 1724 to create sacred sake for the Shiogama Shrine. The name Urakasumi means misty bay, a reference to the beautiful location looking out over the Pacific Ocean. They are famed for their elegant and classic style, making it always a sophisticated choice.
