It’s made only from the youngest, tenderest, silvery leaf buds, harvested just before they open and then allowed to wither gently in the sun. Once infused, they swell and release a succulent and irresistible white tea liquor the colour of Champagne and with delicate floral notes. For the perfect cup, steep 4g of loose leaf in 250ml of 85°C water for three minutes.
